Jon's Healthy Breakfast (for Lunch) Burrito

When we say to our clients to eat plenty of fruits and vegetables, here is an example of what we mean.  This is a quick meal that Cari and I make probably 3-5 days per week, usually for Lunch.  It is an egg white breakfast burrito consisting of broccoli, carrots, serrano pepper, mushroom, red bell pepper, olive oil, and a flax seed whole wheat tortilla.  It is approximately 350 Calories and loaded with nutrients and protein.  Enjoy!

I didn't use any seasoning, although I usually add some salsa to it and that does the trick. Cholula or some hot sauce works well if you need to "enhance" it a little, but it honestly doesn't need much.

Jon, you are a person of many talents. I'm always looking to improve and expand dining options, especially healthy ones. Small substitution, salsa for the peppers, would tailor to personal taste. Looking for an encore. Your advice on keeping us fit both physically and in what we eat makes a difference. You're the man!
